for a perfect Dirty Martini, you'll need:

Serves 1.

1. Combine the gin and dry vermouth in a mixing glass.

2. Add the olive brine, to taste. Start with about 1/2 ounce and taste.

3. Stir to combine.

4. Strain into a chilled martini glass.

5. Garnish with three olives speared on a cocktail stick, or any of the other great garnishes suggested below.

Party tip

For a party, make a pitcher of martini 'mixer'. Combine all ingredients, other than olive brine, in a pitcher and set over a large bowl of ice to keep chilled.

Then all your guests have to do to is fill a glass half way with mixer and add olive brine to taste. Easy!

This trick works with any variation of the classic martini recipe.

dirty pickle martini A dirty martini with pickle juice in place of the olive juice, and a mini gherkin for garnish.

dry Martini The original classic - made with 2 1/2 ounces dry Gin, 1/2 ounce Dry Vermouth and an olive for garnish.

gibson A classic dry martini with cocktail onions in place of the olive/s.

smoky martini A Gibson with a splash of Scotch whisky and a lemon twist for garnish.

sweet martini For those who like things a little sweeter. Made with 1 ounce Gin and 1 ounce sweet Vermouth. Garnish with olive.

vesper martini Invented for James Bond '007', this twist on a classic is made with 1 1/2 ounces of 94 proof Gin, 1/2 ounce of 100 proof Vodka, 1/4 ounce of Lillet Blanc or dry Vermouth and a dash of Angustura bitters.
